This Mediterranean recipe is not only healthy, for its high content of fibres and vitamins, but extremely easy to make and tasty.
In Italy is either used as a side, or as a summer main course.
It can be prepared in advance and it’s a wonderful dish for a picnic or garden party.
Ingredients for the Chickpeas, Cherry Tomatoes and Olive Salad:
– 2 cans of boiled chickpeas
– 100 g of black olives, boneless
– 2 tablespoons of extra virgin olive oil
– 10 cherry tomatoes
– Sea salt
Drain the chickpeas and rinse with water.
Pour in a salad bowl, add the olives.
Wash and cut the cherry tomatoes in half and combine with the chickpeas.
Season with olive oil, pepper and salt to taste.
Stir well, decorate with basil.
There are several alternatives to this basic recipe, if you want to experiment, try adding rocket leaves, chopped mozzarella cheese, garlic, lemon juice or parsley.
